Guests seated in the restaurant during service, waiter at their table

Which property

Audit and mystery visit for restaurants of every type

In dining, the experience is played out at the table and judged in a matter of seconds, from the neighbourhood bistro to the gastronomic table. We audit service, cellar, coordination between dining room and kitchen and hygiene through a guest’s eyes.

Your stakes

What is at stake in this type of property.

Service can no longer rescue the kitchen

Whatever the segment, the kitchen is rarely the weak point: disappointing experiences are played out in the dining room, in the welcome, the timing, product knowledge and handling the unexpected.

A cellar that tells no story

A poorly advised wine list creates no value, whatever the selection. The gap between the list available and the advice actually delivered at the table is measured precisely.

A margin under scrutiny

Returned dishes, complimentary items, portions, badly synchronised courses: real losses nest in service, rarely in the technical sheets.

Use case

A mission conducted in your category.

Anonymised case — restaurant, dining room mystery visit and F&B audit

A chef-owner suspected a loss of margin in the dining room without managing to attribute it. Scope: welcome, taking the order, advice on the wine list, wine service, sequencing of dishes and the bill. The gaps identified concerned wine advice never delivered, untracked returned dishes and waiting times between courses. Service was reviewed workstation by workstation, then checked during a new visit two months later.

No client name, no figure and no reference is published without the prior written approval of the property concerned.
